Our Limited Edition Collection celebrates the changing seasons of Kangaroo Island. This trio showcases small-batch honeys from the nectar of our native flora, capturing fleeting flavours that are only available for a short time. Alongside these seasonal varietals, the collection also includes our award-winning Creamed Honey — smooth, delicate, and unforgettable. With only a limited number produced each year, this is a rare chance to savour the diversity of the island’s pristine landscape.

Island Beach (300g)

Island Beach, on the island’s north-east coast, is a pristine stretch of white sand and turquoise water, backed by dunes and native coastal heath. The severe 2024/2025 drought significantly reduced nectar production across Kangaroo Island, and the east end felt it most acutely. With the Mallees offering only the lightest nectar flow, the flavour in this honey has become beautifully concentrated—and our harvest incredibly small. From all the hives at Island Beach, we gathered just 200kg of honey, making this one of our rarest extracts of the season.

Rich with bitter chicory, scorched brown sugar, and the heady depth of espresso and molasses. Notes of dark chocolate, Tia Maria and roasted coffee grinds give it a boozy, velvety swagger with a smoky finish that lingers - like a good story.

Creamed Mallee (300g)

Recently awarded First in Class at Sydney Royal National Honey Show, Creamed Honey is everything a pantry staple should be—smooth, silky, and spoon-ready. 

Made using a traditional slow-churn method, each small batch is carefully crafted from 100% pure, raw honey. It’s a gentle process to control natural crystallisation, creating the honey’s fine, creamy texture.

Made for both flavour and feel, this honey is light on the palate with a subtle sweetness and signature creamy texture. A perfect match for toast and crumpets, swirled into porridge, or hot herbal teas, it’s a versatile jar to keep within reach.

Little Sahara (300g)

Our latest release. This honey celebrates the ecological richness of Little Sahara, where bees forage across flowering gums, coastal tea-tree and native understory, creating a honey as unique as the landscape itself.

This honey is pure Caramilk energy—buttery and fudgy with soft notes of dulce de leche and warm butterscotch that melt into a mellow swirl of cocoa powder and drinking chocolate. A gentle hint of bitterness arrives at the finish, keeping the sweetness beautifully balanced.

It’s fantastic drizzled over vanilla ice cream, banana bread spread with ricotta or cream cheese, or anywhere you’d usually sneak a spoon of caramel. Feeling bold? Melt it into a batch of blondies and thank us later.
