
Anzac Biscuits with Honey
Makes 20 (approx)
Preparation time: 10 minutes
Cooking time: 10 minutes
Ingredients
1 cup plain flour
1 cup Kangaroo Island Rolled Oats
1 cup desiccated coconut
½ cup brown sugar
150g unsalted butter
4 tbsp Premium Raw Honey
1 tsp baking soda (bicarbonate soda)
Method
- Preheat oven to 180C (160C fan forced)
- Line two baking trays with baking paper
- Mix the dry ingredients in a large bowl
- Melt butter and honey in a saucepan over medium heat and stir until the butter has melted
- Add baking soda to the butter and honey, and stir to combine. Immediately remove from heat.
- Pour the butter mixture into the dry ingredients and mix until just combined.
- Roll a tablespoon of the mixture into a ball, place on the baking tray and flatten slightly.
- Repeat with remaining mixture, placing balls 2-3cm apart on the baking tray.
- Bake for 10 minutes, or until biscuits become golden.
- Stand on trays for 5 minutes before transferring to a wire rack to cool.
