Anzac Biscuits with Honey

Anzac Biscuits with Honey

Makes 20 (approx)

Preparation time:    10 minutes
Cooking time:         10 minutes

Ingredients

1 cup plain flour
1 cup Kangaroo Island Rolled Oats
1 cup desiccated coconut 
½ cup brown sugar
150g unsalted butter
4 tbsp Premium Raw Honey
1 tsp baking soda (bicarbonate soda)

Method

  1. Preheat oven to 180C (160C fan forced)
  2. Line two baking trays with baking paper
  3. Mix the dry ingredients in a large bowl
  4. Melt butter and honey in a saucepan over medium heat and stir until the butter has melted
  5. Add baking soda to the butter and honey, and stir to combine. Immediately remove from heat.
  6. Pour the butter mixture into the dry ingredients and mix until just combined. 
  7. Roll a tablespoon of the mixture into a ball, place on the baking tray and flatten slightly.
  8. Repeat with remaining mixture, placing balls 2-3cm apart on the baking tray.
  9. Bake for 10 minutes, or until biscuits become golden. 
  10. Stand on trays for 5 minutes before transferring to a wire rack to cool.
