It’s more than 35 years since Peter Davis last tasted this ultra rare honey.
 
Peter, the founder of The Kangaroo Island Ligurian Bee Co, was removing a swarm of bees from a beach shack at Hanson Bay, on the south coast of Kangaroo Island, in the 1980s, when he first discovered this honey, and he hasn’t found it since.
 
Until now! With only 17 boxes of honey harvested,  there are only very limited numbers of jars of this honey available and we may never get the chance to experience this intense flavour again.
 
Karkalla’s more common name is pig face.  The leaves, fruit and flowers of this native plant can be eaten and have a salty flavour. The plants have also been used for their medicinal qualities.  When it flowers it has very bright, nectar rich flowers that our bees love.
 
It’s a bittersweet symphony in your mouth! The green vegetal flavour develops from an initial grapefruit-like sweetness to leave a memorable bitter, chicory-like aftertaste. This honey is a great accompaniment to a cheese board (especially with salty, Greek or goats cheeses).
 
If you want to surprise your friends or family with a very different tasting honey, or you just want to secure your taste of this moment in time, then this is the one for you.
 
So even though honey lasts forever, this one won’t, and orders are limited to a maximum of 2 jars each.

SHIPPING INFORMATION

Orders are usually packed and dispatched within 1 to 3 business days, but may take longer during busy periods. Once the order is shipped you will receive notification and a tracking number.

Our honey is raw and is not fine filtered, which means it undergoes minimal processing during the extraction and packing, so that it retains the health benefits from the naturally occurring enzymes.

For this reason we are unable to send honey to Western Australia or the Northern Territory.

We can ship honey to Tasmania, but cannot ship any candles or wax products.

Depending on the country, international shipments may be subject to import taxes, duties and custom fees which are levied by the country of destination and are the responsibility of the recipient.

In some instances honey or honey products may not be cleared by Customs. Please be aware that we cannot offer refunds or guarantee receipt of products outside of Australia, and recommend checking the requirements of the destination country before placing an order.

Due to customs restrictions, we are unable to ship honey to countries within the EU.

A unique gift

Have purchased the limited addition Karkalla honey as a gift for the chef in the family who happens to like trying Australia's different honeys. I'm sure he'll be very happy adding it to his collection

Definitely Different

As I collect different honeys, I appreciate the uniqueness of this honey and its rarity makes it special. It definitely has a bitter overtone which pairs well with strong cheese.
Would also work as a marinade and I'm wondering how it would go in an Asian dish?

This honey is definitely an acquired taste.

Karkalla honey has a super unique flavour, and it is significantly bitter. If you approach it like regular honey, you're not going to like it. Don't spoon it from the jar — like with Cup Gum honey — it's far too bold for that. It's not great on toast either, unless you're a fan of more bitter flavours. I have found it pairs well with blue cheese, brie, or a strong cheddar. It's not going to be my everyday honey (Cup Gum or Premium Raw are those for me) but it definitely has a place in my honey lineup.
