The Story Behind the Jar
Island Beach, on the island’s north-east coast, is a pristine stretch of white sand and turquoise water, backed by dunes and native coastal heath. The low-rainfall environment produces tough, shrubby plants that thrive in sandy soils—providing vital habitat and forage for native birds, bees, and other pollinators.
The severe 2024/2025 drought significantly reduced nectar production across Kangaroo Island, and the east end felt it most acutely. With the Mallees offering only the lightest nectar flow, the flavour in this honey has become beautifully concentrated—and our harvest incredibly small. From all the hives at Island Beach, we gathered just 200kg of honey, making this one of our rarest extracts of the season.
Tasting Notes:
Deep, dark, and unapologetically bold. This is the moody jazz bar of honeys. Rich with bitter chicory, scorched brown sugar, and the heady depth of espresso and molasses. Notes of dark chocolate, Tia Maria and roasted coffee grinds give it a boozy, velvety swagger with a smoky finish that lingers - like a good story.
Pairing:
Pair it with a slab of dark choc brownie, stir it through black coffee, or serve it with a wedge of blue cheese if you’re feeling fancy. It’s also the perfect, sweet, smoky twist in cocktails—try it in place of sugar syrup in your next espresso martini or Old Fashioned. Just don’t expect sweet little tea party energy. This one brings the night shift.

Orders are usually packed and dispatched within 1 to 3 business days, but may take longer during busy periods. Once the order is shipped you will receive notification and a tracking number.
Our honey is raw and is not fine filtered, which means it undergoes minimal processing during the extraction and packing, so that it retains the health benefits from the naturally occurring enzymes.
For this reason we are unable to send honey to Western Australia or the Northern Territory.
We can ship honey to Tasmania, but cannot ship any candles or wax products.
Depending on the country, international shipments may be subject to import taxes, duties and custom fees which are levied by the country of destination and are the responsibility of the recipient.
In some instances honey or honey products may not be cleared by Customs. Please be aware that we cannot offer refunds or guarantee receipt of products outside of Australia, and recommend checking the requirements of the destination country before placing an order.
Due to customs restrictions, we are unable to ship honey to countries within the EU, for other destinations there is a limit of 2kg per order.
