The Phoenix of Rare Honeys
According the Greek mythology the phoenix is an immortal bird that rises from the ashes of its predecessor.
The Yacca plants found at the Western end of Kangaroo Island are the phoenix of the plant world.
It can take twenty years for a Yacca plant to produce its first flowers. The 2020 fires on Kangaroo Island, as tough as they were on most plants, stimulated the growth of the spectacular flower spikes on the Yacca plants. The flowers were up to 4 meters high with hundreds of nectar rich, creamy white flowers that the bees loved . Only after a bushfire, is there enough of these flowers to produce this unique honey.
It is four years since the bushfires devastated Kangaroo Island, a fitting time to recognise that out of devastation, great beauty and unique experiences can emerge.
This is a very rare honey. Only about 1500 jars were produced and there is unlikely to be any more for many years to come. The honey is sweet, mildly spicy, caramel flavoured with warm notes of candied nuts and raisins. The high caramel notes mean it’s an ideal addition to a coffee flavoured drink or dessert. This sweet, warm honey is a perfect balance for coffee’s bitterness.
It would make an exceptional, rare gift or something to be enjoyed on special occasions.

Orders are usually packed and dispatched within 1 to 3 business days, but may take longer during busy periods. Once the order is shipped you will receive notification and a tracking number.
Our honey is raw and is not fine filtered, which means it undergoes minimal processing during the extraction and packing, so that it retains the health benefits from the naturally occurring enzymes.
For this reason we are unable to send honey to Western Australia or the Northern Territory.
We can ship honey to Tasmania, but cannot ship any candles or wax products.
Depending on the country, international shipments may be subject to import taxes, duties and custom fees which are levied by the country of destination and are the responsibility of the recipient.
In some instances honey or honey products may not be cleared by Customs. Please be aware that we cannot offer refunds or guarantee receipt of products outside of Australia, and recommend checking the requirements of the destination country before placing an order.
Due to customs restrictions, we are unable to ship honey to countries within the EU.
